I was cruising the WWW this morning and stumbled across some very useful discussions and websites dedicated to Mexican food.

Mexican Cooking [Google Group discussion forum]:

A number of serious, knowledgeable cooks participate in this very active food forum. Plenty of recipes, too. (Please use the link in the right hand column.)

How about TexMex Tofu or Spinach Chickpea Frittata? Vegan Chile Rellenos, Salsa Fresca de Nopales, Lentil Tacos... the recipe list here is long and delicious.

Mexican Comida (by Jose Luis)

Chiles, herbs, recipes, fiestas, food dictionaries in Spanish and Nahuatl, and many other topics well worth delving into. His Mexican cinema pages (in Spanish) are particularly useful if you'd like to know more about the best Mexican films, directors, etc. The photograph in the upper right hand corner is from the Mexican Comida website.

A very nice reference for serious cooks and hungry travelers, well worth printing out. Again, this from the Mexican Comida site.
