Gisela's Flan

Lorena: When we stayed in Ken & Barbara's house in San Miguel de Allende last fall, we had the gastronomic pleasure of eating meals prepared by Gisela. This flan was one of our favorites and so easy to prepare.

The flan:

I small can of leche lechera (sweetened condensed canned milk)
1 medium can of evaporated milk (Carnation)
200 grams (about 1/2 lb) of crumbly cheese: "queso ranchero" or "queso fresca"
4 eggs

Place all of the above in the blender, and blend for about 1 minute

The Caramel:

2-3 TB sugar in a hot frying pan.

STIR CONSTANTLY. This will just take a minute or two.

When the sugar has melted, pour it into a small baking pan and quickly spread the carmel to cover the bottom of the pan (if it hardens before you can spread it,that's ok too.).

Then pour the flan mixture into the Pan.

Cover the pan with tinfoil.

Place this pan in another pan of water.

Place the nesting pans into a cold oven. Turn to 200 degrees Centigrade (just under 400 degrees Fahrenheit). Bake for 1 hour.

Options:

To make the flan less sweet use 1/2 can of leche lechera.
